The flavors of caprese salad but within a grilled sandwich. The bread is covered with a homemade pesto, fresh mozzarella cheese, tomato and basil leaves. It is covered with olive oil to golden brown and cooked until the cheese is melted and golden bread. A new way of seeing “grilled cheese”.

Tips for pesto
You can prepare the pesto a day or two before and refrigerate until ready to use. If you have leftover pesto you can store it in an airtight container in the refrigerator for 2 weeks.
You can make frozen pesto cubes and keep handy when you do not know that you are cooking. They are very easy to do, just fill out a tray of ice with pesto and put in the freezer until it hardens very well.
