Grilled sweet potato curry and yoghurt dip with mint

You know that the sweet potato is rich in vitamins and nutrients such as vitamin A, C, iron and potassium. To take advantage of all nutrients and enjoy this delicious vegetable I decided to cut them into slices, cover with olive oil, curry and grill it until they were soft. Nothing complicated to prepare and the result is excellent.

Sweet potato softens on the grill and is marked with a slightly smoky flavor. Because it is marked with the grill it is crispy parts.

To accompany a creamy yogurt sauce, which is prepared in minutes but is the perfect and refreshing to counter the taste of sweet potato curry accompaniment ago.

(Serves 4-6 as a starter or 2 servings as a main course accompanied by a salad)
