Artichokes are of those ingredients not normally buy or use because it is not known very well how to cut them, clean them and prepare them. With this tutorial I explain how to prepare artichokes easily. If you have never cooked that I’m sure can cook easily after reading these tips.
To prevent turn dark or rust need to cover the part that you cut the artichokes with lemon juice or place the artichokes in a bowl with water and lemon juice, so go preparing lemons or 1 medium bowl with squeezed lemon juice.
To start cutting the hardest part of the stem but without cutting completely, peel the stem with a potato peeler to get to the bottom of the heart of the artichoke. Remove the ugly and dark outer leaves (if any) and with scissors cuts the tip of the leaves as this is sharp.
With a knife cut the top of the artichoke (1/2 inch) and throws away.
Prepare your kitchen steamer and steamed artichokes for 20 to 30 minutes, and it helps that they are not so soft as to whether the kitchens in boiling water. The time depends on the size of artichokes, you’re going to cook until you can nibble without problem with a knife the heart of the artichoke and the leaves can easily remove or pull. If you go to only the steaming make sure they are soft, if you want more flavor on the grill not overcook to cook 10 minutes on the grill.
To give flavor on the grill in a bowl mix ¼ cup olive oil, 1 to 2 cloves garlic, juice of 1 lemon and fresh herbs such as thyme, rosemary etc.
Place the artichokes in the preheated grill to medium-high heat and brush covers well the whole artichoke oil mixture. Place on the grill with the inside in contact with the first grill and cook for 5 to 10 minutes turning occasionally, or until the artichokes are marked and cooked.
Serve hot with mayonnaise, lemon aioli, infused oil (if you overran above), butter flavor or with your favorite sauce. Start eating leaves, scraping the suavecita part of the leaf with your teeth and discarding the sheet once you do this (you can flavor with sauces I mention you up). Once you’ve eaten all the leaves eat heart of the artichoke.
