How to remove the bitter taste
You’ll start by removing the bitter taste of the eggplant. This is done by cutting the eggplant into slices or strips (depends on how you are going to prepare) soaking in cold water and salt (preferably salt grain) for 20 to 30 minutes at least.
Over time strip the water, wash and dry the eggplants well either by placing on paper towels or drying with a clean cloth kitchen well.
How you cook
Cover each side of the slices or eggplant slices with olive oil and season to taste with salt and pepper.
To give them more flavor you can add herbs or spices olive oil that you will use to cover either a mixture with garlic and chopped herbs or cayenne pepper for a spicy version.
